The story goes that Antonia was one of the sisters of the Bethaniën convent that stood on this spot, and that her white habit gave the beer its name. The convent is real; the sister is a tale from the tap.

The legend

The sister in white

Around 1450 a convent stood where you are sitting: the Bethaniënklooster, a house for women who wanted to leave their old lives behind. The city called them the bekeerde susters, the converted sisters, and by 1462 around two hundred women lived here. That much is in the records.

Antonia is not. The story goes that she was one of those sisters, that her habit was whiter than anyone else's, and that when the brewery needed a name for its witbier, hers was the one that fitted. Nobody has found her in the archives. She lives on the label, in the glass and in the stories we tell at the bar.

The beer itself is easy to describe: wheat and pilsner malt, bright citrus and a hint of coriander, 5,4%. It is the lightest of our three house beers. It goes with fish and with anything from the Flammkuchen oven: try it with the Suster's Salmon Flammkuchen (€13,90), the fish and chips (€18,50) or the grilled salmon with wine sauce (€24,90).

What food goes with it?

Fish and the lighter dishes on the card: the Suster's Salmon Flammkuchen (€13,90), the fish and chips (€18,50), the grilled salmon with wine sauce (€24,90), or the tempura shrimps (€9,90) as a snack with the first glass.

How strong is it?

5,4% alcohol. It is the lightest of our three house beers; De Blonde Barbier is 6,2% and De Manke Monnik 7,2%. We serve it in 33 cl (€5,90) and 50 cl (€9,80), and on the tasting flight of four beers for €12,90.
